Potassium sorbate is a preservative used in the world, the most important one, which is a colorless to white flake-like crystals or crystalline powder, odorless or slight odor.Instability in the air.Be coloring. Molecular weight of 150.22. Hygroscopicity. Soluble in water,ethanol. Potassium sorbate is an international FAO and WHO recommended safe and efficient preservative, widely used in food, beverages, tobacco, pesticides, cosmetics and other industries, as the unsaturated acid can also be used for resins, spices and rubber industries. Potassium sorbate can effectively inhibit molds, yeasts and aerobic bacteria activity, but also to prevent botulism, staphylococcus, salmonella and other harmful microbial growth and reproduction, However, bacteria and spores of anaerobic bacteria such as Lactobacillus acidophilus beneficial microorganisms almost ineffective, and its role in curbing growth more than the sterilization to achieve the effective extension of storage time of food, and keep the original flavor of food.
